This vegan mango nice cream is a refreshing and healthy alternative to traditional ice cream. The natural sweetness of ripe mangoes combined with the creamy coconut milk creates a tropical treat that will transport you to a tropical oasis.
Ingredients:
- 2 ripe mangoes, peeled and chopped
- 1 can of full-fat coconut milk, refrigerated overnight
- 1/4 cup of maple syrup
- Juice of 1 lime
- Pinch of salt
Instructions:
- Place the chopped mangoes in a blender or food processor and blend until smooth.
- Open the can of refrigerated coconut milk and scoop out the solid coconut cream, leaving behind the liquid.
- In a separate bowl, whisk together the coconut cream, maple syrup, lime juice, and salt. Add the mango puree and mix until well combined.
- Pour the mixture into a freezer-safe container and freeze for at least 4 hours, or until firm.
- Remove the container from the freezer and let it sit at room temperature for a few minutes to soften slightly.
